Yield: 2 drinks
Ingredients:
3 tomatillos, husked
¼ cucumber, chopped
4 sprigs mixed flat-leaf parsley and cilantro
½ jalapeno, seeded
1 cup (240 ml) clam juice
¼ cup (60 ml) lime juice, divided
½ tablespoon (7.5 ml) celery salt
Cajun spice mix, for rimming
Ice cubes, for serving
2 ounces (60 ml) vodka
1 teaspoon (5 ml) Worcestershire sauce
1 teaspoon (5 ml) green hot sauce
Salt
White pepper
Method:
Add tomatillos, cucumber, parsley and cilantro, jalapeno, clam juice, 2 tablespoons (30 ml) lime juice, and celery salt to a blender. Puree.
Rim glasses with Cajun spice mix. Fill glasses with ice cubes to the top. Add vodka and let settle. Add remaining lime juice. Add Worcestershire. Add green hot sauce. Add salt. Add white pepper. Top with tomatillo mixture. Stir using the handle of a spoon or a swizzle stick.
For a non-alcoholic version, just leave out the vodka.
