Clementine Earl Grey Bubbles

Ingredients:

½ ounce (15 ml) clementine juice

1 teaspoon (5 ml) lemon juice

½ ounce (15 ml) Earl Grey simple syrup

Prosecco

1 teaspoon (5 ml) Averna

 

Earl Grey simple syrup

2 cups (480 ml) just-boiled water

8 bags Earl Grey tea

1 ½ cups (360 ml) sugar

 

Method:

To make the Earl Grey simple syrup, steep the tea bags in the just-boiled water for 3-5 minutes. Remove tea bags and transfer steeped water to a saucepan. Add sugar and mix in. Simmer until reduced to one-third. Remove from heat and let cool.

Add clementine juice to a champagne flute. Add lemon juice. Add ½ ounce (15 ml) of the simple syrup. Top with Prosecco. Top with Averna.
