Chocolate and Cognac Cocktail

Ingredients

For Syrup

  • 2 ¼ cups cream – (625ml)
  • ½ cup sugar – (125ml)
  • ¼ cup dark cacao powder – (60ml)
  • 1-cup milk chocolate couverture – melted – (250ml)

For Drink

  • 3 tablespoons of chocolate syrup* – (45ml)
  • 3 tablespoons of cognac – (45ml)
  • 4 teaspoons crème de cacao – (20ml)
  • 3 tablespoons cream – (30ml)

Directions

  1. Syrup:  In a saucepan mix combine cream, sugar and sifted cocoa powder. Bring to boil. Remove from heat and strain into a glass bowl.  Add the melted mixture to the cream and pour into jar.  Put in the fridge and let cool down.
  2. Note:  The syrup can be used many drinks. Store it in an airtight jar and keep refrigerated. It will keep for months. To dilute the syrup try cream or alcohol.  To sweeten it try condensed milk.
  3. Cocktail: Bring syrup to room temperature.  Combine the cognac, crème de cacao and cream in a cocktail shaker.  Add chocolate syrup and shake it up.  Pour into a decorative cocktail glass.   Top up with whipped cream and grated chocolate and serve.
