Upside down cranberry cake

Ingredients

  • 2 apples peeled and sliced
  • 1 cup of cranberries
  • 1 cup of sugar
  • ¼ cup of water
  • 1 tbsp of butter
  • 1 cup of flour
  • 1 ½ teaspoons baking soda
  • ¼ cup butter
  • ¾ cup sugar
  • 1 egg
  • ½ tsp vanilla
  • ½ cup milk

Directions

  1. Prepare 4 3” cast iron pans and prepare them by lightly buttering the sides.
  2. Place sugar and water into a saucepan and bring to a boil.
  3. Cook until golden and add 1 tablespoon of butter.
  4. Pour equally into 4 prepared baking dishes.
  5. Layer in the apples and cranberries and set aside.
  6. Prepare the batter by creaming together the butter and sugar until fluffy and then add the egg and vanilla and mix thoroughly.
  7. In a separate bowl mix together the dry ingredients and add this alternately with the wet ingredients and mix until well blended.
  8. Divide the batter among the baking dishes and place in a 350 degree oven and cool slightly.
  9. Un-mold onto serving dish and garnish with whipped cream.
