Molten Cakes
Preparation time is 15 minutes for ganache + 20 for batter.
Ease of preparation is easy/moderate.
Ganache
Ingredients
- 2 ½ ounces of Whipping Cream
- 1 ounce of butter
- 1 ½ ounce of dark Chocolate
- ½ ounce of water
Directions
- To make the ganache bring the cream and water to a boil.
- Add the chopped chocolate and butter and stir to combine.
- Remove from heat and place in fridge to cool and firm up.
Cake Batter
Ingredients
- ½ ounce of butter
- 2 egg yolks
- 3 ounces of dark chocolate
- 1 ounce of ground almond
- ½ ounce of flour
- 1 ounce of cornstarch
- 2 egg whites
- 1 ¼ ounces of sugar
Directions
- For the cakes, mix the egg yolks and butter together until light and creamy.
- Add the chocolate and dry ingredients and stir to combine.
- In a separate bowl whip the egg white until foamy.
- Add the sugar and continue to whip until they form soft peaks.
- Fold the whites into the chocolate batter.
- Prepare 4 eight ounce ramekins by lightly buttering and flouring.
- Fill each 1/3 full and place in the centre 2 melon balls of the ganache.
- Cover with the remaining batter to fill the dishes 2/3 full.
- At this point the cakes can be refrigerated until ready to bake and serve.
- To bake, place in a preheated 325 degrees Fahrenheit oven for about 15 minutes or until the tops have risen and cracked, the inside should be melted.
- Serve immediately with whipped cream or ice cream.
