Eton Mess

An easy no bake dessert made with fresh strawberries, whipped cream, and meringue.

Ingredients:

  • 3 ½ cups (500 g) fresh strawberries (plus extra for serving)
  • 1 cup (125 g) fresh raspberries (plus extra for serving)
  • 1 ½ tablespoon (22 ml) granulated sugar
  • 1 ½ cups (350 ml) heavy cream
  • ½ cup (120 ml) full fat mascarpone cheese
  • 2 cups (70 g) store bought meringues

Method:

Quarter and hull strawberries and place in a large bowl. Add raspberries and sprinkle over sugar. Stir until all the fruit is coated and set aside, 15-20 minutes.

Meanwhile, in a separate large bowl, whip cream until soft peaks form, 4-5 minutes.

Fold the mascarpone cheese through the whipped cream.

Crush meringues using your hands into the whipped cream bowl. Add the fruit to the whipped cream bowl. Fold together gently with a rubber spatula.

Serve Eton mess in bowls or cups and top with extra fresh fruit.
