Easy Chocolate Hazelnut Truffles (gluten free)

Ingredients:
- 1 1/4 cup natural hazelnuts (works with other nuts)
- 1 1/4 cup dates (pits removed)
- 1 teaspoon vanilla
- 3 1/2 tablespoons cocoa powder
- 1/4 teaspoon sea salt
- 3/4 cup natural, unsweetened shredded coconut
Directions:
- Grind hazelnuts in a food processor until finely ground.
- Add dates to food processor. Grind until you have a smooth consistency.
- In a bowl, add vanilla, cocoa powder and sea salt to your mixture, and stir to combine.
- Form small 1 inch round balls with your hands and roll in shredded coconut until covered.
- Enjoy!
