Chocolate Mousse

Ingredients

  • 3 oz bittersweet chocolate, finely chopped
  • 9 oz milk chocolate, finely chopped
  • 6 oz white chocolate, finely chopped
  • 2&1/4 cups heavy cream (35%)
  • 1 cup whole milk

Directions

  1. Take 6 large martini glasses or wine glasses and put them in the freezer to chill
  2. Melt the bittersweet chocolate (either in a bain-marie or in the microwave) in a large bowl
  3. Whip a ¾ cup of the 35% cream until soft peaks form
  4. Heat a ½ cup of the milk in a small sauce pan. Add the milk to the melted chocolate, whisking all the while.
  5. Add the whip cream to the bowl and continue to whisk until everything is nicely mixed
  6. Divide the chocolate mousse between the six glasses and return to the freezer (or the fridge if there’s no room in the freezer)
  7. Melt the milk chocolate (either in a bain-marie or in the microwave) in a large bowl
  8. Whip a ¾ cup of the 35% cream until soft peaks form
  9. Heat a 1/3 cup of the milk in a small sauce pan. Add the milk to the melted chocolate, whisking all the while.
  10. Add the whip cream to the bowl and continue to whisk until everything is nicely mixed
  11. Divide the chocolate mousse between the six glasses and return to the freezer (or the fridge if there’s no room in the freezer)
  12. Melt the white chocolate (either in a bain-marie or in the microwave) in a large bowl
  13. Whip a ¾ cup of the 35% cream until soft peaks form
  14. Heat a ½ cup of the milk in a small sauce pan. Add the milk to the melted chocolate, whisking all the while.
  15. Add the whip cream to the bowl and continue to whisk until everything is nicely mixed
  16. Divide the chocolate mousse between the six glasses and return to the fridge to chill till ready to serve
  17. Top with chocolate curls or whip cream with crushed nuts just before serving
