Ingredients:
5 cups (1.2 l) sugar
½ teaspoon (2.5 ml) salt
1 ¼ cups (300 ml) water
2 cups (480 ml) mixed cashews, almonds, and pistachios, chopped
3 cups (720 ml) good quality chocolate, in pieces
Oil, for greasing baking sheet and spoon
Method:
Let’s get baking!
Line a baking sheet with parchment paper.
Stir sugar, salt, and water in a pot on the stove until the sugar dissolves. Let cook and bubble until it turns golden (about 10 minutes).
Stir in the mixed nuts. Turn onto the parchment-lined baking sheet. Spread evenly using an offset spatula. Let cool.
Melt the chocolate in a double boiler. Pour the chocolate over the cooled brittle. Spread with an offset spatula. Let set.
Break and serve.
