Brandy snap baskets

Preparation time is 20 minutes.

Ease of preparation is easy.

Pre-heat oven to 350 degrees Fahrenheit.

Ingredients

Baskets:

  • 1/3 cup butter
  • 1/3 cup sugar
  • ¾ cup corn syrup
  • 1 teaspoon brandy or vanilla
  • ¾ cup flour

Filling:

  • 1 ½ cups marscapone cheese
  • fresh berries
  • 2 teaspoons maple syrup
  • 1 ounce brandy

Directions

Baskets:

  1. Mix all ingredients except flour. Bring to a boil, then remove from heat and whisk in flour.
  2. Drop tablespoon size drops onto a baking sheet covered with parchment paper. (6 drops per sheet).
  3. Bake at 350 degrees Fahrenheit for 6-8 minutes or until golden brown.
  4. Let cool slightly, then lift from sheet and mould by pressing inside a cup or a small bowl.

Filling:

  1. Fill each basket with ¼ cup marscapone cheese (can use ice cream scoop) and fresh berries.
  2. Heat maple syrup in pan, add brandy and flambé.
  3. Pour over baskets.
