Brandy snap baskets
Preparation time is 20 minutes.
Ease of preparation is easy.
Pre-heat oven to 350 degrees Fahrenheit.
Ingredients
Baskets:
- 1/3 cup butter
- 1/3 cup sugar
- ¾ cup corn syrup
- 1 teaspoon brandy or vanilla
- ¾ cup flour
Filling:
- 1 ½ cups marscapone cheese
- fresh berries
- 2 teaspoons maple syrup
- 1 ounce brandy
Directions
Baskets:
- Mix all ingredients except flour. Bring to a boil, then remove from heat and whisk in flour.
- Drop tablespoon size drops onto a baking sheet covered with parchment paper. (6 drops per sheet).
- Bake at 350 degrees Fahrenheit for 6-8 minutes or until golden brown.
- Let cool slightly, then lift from sheet and mould by pressing inside a cup or a small bowl.
Filling:
- Fill each basket with ¼ cup marscapone cheese (can use ice cream scoop) and fresh berries.
- Heat maple syrup in pan, add brandy and flambé.
- Pour over baskets.
