Finally… anyone can build the Ultimate Brunch Club Sandwich. Why choose between a classic BLT and a good old fashioned Eggs, Ham, and Cheese… when you can stack up both in one over-the-top, towering, mouthwatering and mouth-stretching breakfast sandwich? Forget your boring old scrambled eggs on toast my friends… this… is the real deal!
Ingredients:
- 4 slices of bacon, cut in half
- 2 eggs
- Vegetable oil, for cooking eggs
- 4 slices cooked country ham
- 4 tablespoons (60 mL) maple syrup
- 6 slices Breakfast Bread (see recipe)
- Prepared mayonnaise, as needed
- 4 slices smoked gouda or other semi-firm melting cheese
- 1 ripe avocado, sliced
- 4 thin slices beefsteak tomato
- 4 leaves Boston lettuce, torn
- Salt and pepper
Method:
Preheat the oven to 350 F (175 C).
Line a pan with parchment paper, arrange the bacon onto the pan. Bake in the oven for 12-14 minutes or until they are a golden color and crisp.
Drain excess fat on a paper towel. Reserve bacon and keep warm.
Heat the vegetable oil in a large non-stick skillet over medium low heat, add the eggs and season with salt and pepper. Cook over easy and keep warm while you build the sandwich.
In a separate pan, warm the sliced ham in the maple syrup. Keep warm.
Toast the slices of bread and spread mayonnaise on the interior surfaces.
On one slice of bread, layer the bacon, half of the avocado, half the tomato, and half of the lettuce.
Cover with a second slice of bread. Layer the second slice with egg, sliced Gouda, and ham.
Complete the assembly with a third slice of bread.
Put a toothpick in each of the 4 corners of the sandwich and cut into triangles.
Repeat the operation with the rest of the ingredients.
