We’d like to propose a toast… & toppers! Join in the fun and pick and choose from an array of delightful toast topping ideas – from sweet and indulgent Nutella, banana, and marshmallows to rich and decadent lobster, avocado, and caviar and everything in between… This is really less of a recipe and more of an opportunity to create your own ultimate brunch menu!
 


 

Ingredients:

  • 1 loaf Breakfast Bread (see recipe)
  • Unsalted creamery butter
  • Flaky sea salt
  • Avocado, lime, lobster meat (cooked and cleaned), lime zest, tobiko caviar
  • Onions, blue cheese, and candied walnuts
  • Pear, Taleggio cheese, prosciutto
  • Sweet potato, peanuts (toasted and chopped), bird’s eye chili, lime, minced ginger, cilantro
  • Hummus, parsley, tomatoes, olive oil, lemon juice and
  • Nutella, bananas, baby marshmallows, icing sugar

 


 

Method:

Cut thick slices of the Basic Bread and toast quickly over extremely high heat.  Butter immediately then top slices with:

Sliced ripe avocado, mashed with lime and salt, lobster meat, garnish with lime zest and tobiko caviar

Slice onion thin and caramelize slowly in butter until golden brown and soft – add to toast with blue cheese and chopped candied walnuts

Sliced pear, Taleggio and prosciutto

Bake a sweet potato 45 minutes, until soft, scoop out flesh and mash with ginger, olive oil and salt, smear on toast and top with peanuts, chopped chilies, cilantro and a spritz of lime

Chop tomatoes and parsley, add lemon and salt, and rest for 10 minutes. Schmear hummus on toast, drain parsley and tomatoes and add to top of hummus.  Garnish with olive oil to serve.

Nutella, sliced bananas and marshmallows, toast again. Garnish with icing sugar to serve.

Garnish toasts with flaky sea salt where applicable.

Notes:

Start with good, fresh bread, not day old.

Slice it thicker, for Basic Bread, a little over an inch thick.

Get the toaster very hot; some commercial toasters have a surface temperature of up to 750 F (380 C). Depending on the thickness and type of bread, cook it in a super-hot toaster for 2 ½ -4 minutes to crisp up the outside without completely drying out the inside.

Use butter, and choose carefully – higher quality makes a huge difference when the butter is front and center.

Use salt, try a better quality flaky sea salt to up your game.

Eat it right away… Toast is not wine, it does not improve with age.
