Gusto TV’s ‘Let’s Brunch’ is a fun show starring warm host Vanessa Gianfrancesco, this recipe was featured in an episode about Farmhouse-style favorites like this one, good ol’ fashioned porridge – packed with oats and cinnamon, and dressed up with chia seeds, almonds, coconut, and fresh raspberries… it’s a Let’s Brunch take on simple, sweet, and creamy treat, carefully crafted to keep your belly full all day.
Ingredients:
Porridge
- 1 cup (240 ml) rolled oats
- 1 ½ cups (350 ml) water
- 1 cup (240 ml) milk
- 1/8 teaspoon (0.75 ml) salt
- 1/8 teaspoon (0.75 ml) cinnamon
- 1 teaspoon (5 ml) butter
- 4 teaspoons (20 ml) chia seeds
- 4 teaspoons (20 ml) sliced almonds
- 4 teaspoons (20 ml) toasted shredded unsweetened coconut
- Fresh raspberries, to serve
- Honey, to serve
Peach Lavender Lemonade
- 1 cup (240 ml) water
- ½ cup (120 ml) honey
- 1 tablespoon (15 ml) dried lavender for culinary use
- 1/8 teaspoon (0.75 ml) salt
- 1 cup (240 ml) fresh lemon juice
- 2 cups (470 ml) frozen peaches
- 1 cup (240 ml) cold water
- Fresh lavender sprigs for culinary use, to garnish
Method:
Add the oats to a saucepan. Pour over water and milk. Stir together. Bring the mixture to a boil, then down to a simmer. Simmer 10-15 minutes until thick. Stir in salt and cinnamon. Add butter and stir in. Spoon into bowls.
Sprinkle chia seeds on top. Add sliced almonds. Sprinkle with coconut. Add raspberries to one side. Drizzle honey on top.
For Lemonade:
Add water and honey to a pot and heat until honey starts dissolving. Add dried lavender and stir in. Simmer 10 minutes. Remove from heat and let steep 10 minutes. Strain. Stir salt into mixture. Allow to cool.
Pour mixture into a blender. Add lemon juice, frozen peaches, and water, and blend.
Pour into a glass. Garnish with a sprig of lavender.
