Banana Fritters

Ingredients

  • 2 ripe bananas
  • 2 tablespoons milk (30 millilitres)
  • 2 eggs
  • 1 tablespoon butter, melted (15 millilitres)
  • 1 cup flour (125 grams)
  • 3 tablespoons white sugar (45 grams)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 1 quart oil for frying (1 litre)
  • 1 cup confectioners’ sugar for dusting (125 grams)

Directions

  1. Preheat the oil to 375 degrees Fahrenheit
  2. In a large bowl, mash the bananas.
  3. Mix in the milk, eggs and butter until smooth.
  4. In a separate bowl, combine the flour, sugar, baking powder, salt, cinnamon and nutmeg.
  5. Stir the dry ingredients into the banana mixture.
  6. Heat the oil in a deep fryer or heavy bottomed pan.
  7. Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes.
  8. Drain on paper towels and dust with confectioners’ sugar.
