Vietnamese Chicken Wings

Ingredients:

For the sauce:

1/2 cup (120 ml) fish sauce

1 tablespoon (15 ml) garlic powder

1 lime, juice

1/2 cup (120 ml) sugar

1 1/2 teaspoon (7.5 ml) black pepper, ground

 

For the wings:

Oil, for the grill pan

1 ½ pounds (680 g) chicken wings, trimmed

 

Garnish:

2 tablespoons (30 ml) peanuts, crushed

1 tablespoon (15 ml) cilantro, chopped

 

Special equipment:

Cast iron grill pan

 

Method:

Preheat oven to 400 F (205 C).

For the sauce:

In a medium saucepan, combine fish sauce, garlic powder, lime juice, sugar, and pepper.

Bring pan to medium heat. Once sugar is dissolved and sauce is syrupy, remove from heat and set aside.

For the wings:

Heat a cast iron grill pan to high heat, brush with oil. Sear wings on both sides, leave in pan.

Brush both sides of the wings with the some of the sauce.

Put the grill pan with the wings into the oven and bake for five minutes.

Remove pan from oven and brush both sides of the wings with the remaining sauce, return the pan to the oven and bake for five more minutes or until done.

To serve:

Remove chicken to serving dish, garnish with peanuts and cilantro.
