Tropical Sweet Wontons

This recipe is from season 1, episode 2 of Miguel’s Tropical Kitchen. 

Ingredients

  • 4 Wontons Wrappers
  • 2 Strawberries
  • 2 Passionfruit
  • 1 Small Banana
  • 1 Kiwi Fruit
  • 1 Star Apple
  • 1 Tsp Lemon Rind
  • 1 Tsp Kaffir Lime Rind
  • White Sesame Seeds
  • Black Sesame Seeds
  • 1 Litre Grapeseed Oil

Syrup:

  • 60 G Palm Sugar
  • 2 Cups Water
  • 1 Red Chilli
  • 1 Green Chilli
  • 3 Kaffir Lime Leaves
  • 1 Tsp Lemon Rind
  • 1 Cilantro Leaf
  • 4 Jaboticaba Grapes

Directions

Wontons:

  1. Finely dice the strawberries and scoop the passionfruit into a mixing bowl.
  2. Chop the banana and cut the Kiwi fruit in strips (leaving the skin on), remove the pips from the star apple before adding to the mix.
  3. Add the rind of the lemon and kaffir limes, and the white and black sesame seeds.
  4. Mash the ingredients with the back of a fork and mix together.
  5. Lay out the wonton wrappers and place a little bit of mixture in the center of each one.
  6. Wet the edges of the wonton wrappers, bringing the edges together to make parcels.
  7. Place the parcels in the hot grapeseed oil until they are golden brown. Drain off the excess oil.

Syrup:

  1. Grate the Palm Sugar into a hot wok.
  2. Add water to the wok and then add chillis, lime leaves, lemon rind, kaffir leaves and also the left over fruit from the wonton mix.
  3. Tear the Cilantro leaf into the syrup.
  4. Pour the syrup onto a serving tray and place the wontons around it.
