Roasted Heirloom Carrots | The Wizard of Whatever
Ingredients
- 3 bunches rainbow heirloom carrots, scrubbed
- 4 tablespoons (60 ml) peanut oil
- ¼ cup (60 ml) honey
- 1 tablespoon (15 ml) carraway seeds
- Salt and pepper
- Chopped parsley, to garnish
Method
- Preheat oven to 450 F (230 C).
- Toss the carrots, oil, honey, and carraway together on a baking sheet. Season with salt and pepper. Arrange in a single layer. Roast, turning once, until tender and slightly browned, roughly 15 minutes.
- Garnish with chopped parsley and serve immediately.
