Roasted Heirloom Carrots | The Wizard of Whatever

Ingredients

  • 3 bunches rainbow heirloom carrots, scrubbed
  • 4 tablespoons (60 ml) peanut oil
  • ¼ cup (60 ml) honey
  • 1 tablespoon (15 ml) carraway seeds
  • Salt and pepper
  • Chopped parsley, to garnish

Method

  • Preheat oven to 450 F (230 C).
  • Toss the carrots, oil, honey, and carraway together on a baking sheet. Season with salt and pepper. Arrange in a single layer. Roast, turning once, until tender and slightly browned, roughly 15 minutes.
  • Garnish with chopped parsley and serve immediately.
