Wine Suggestion: Shiraz

Yield: 15 snack size servings

Ingredients

  • 1 large block of old cheddar cheese (approx. 500 grams)
  • 1 large wedge of blue cheese (approx. 500 grams)
  • 1 fresh baguette

Directions

  1. Place blocks of cheese onto serving platter with sharp knives for self-serving.
  2. Cut baguette into ¼” slices to create little rounds & arrange on platter with cheese.
  3. Serve as is.

Wine Pairing

Description: This red wine is full bodied with intense aromas and flavours of freshly cracked black pepper and dark berry fruit like black currant, blackberry, and raspberry. The flavours fill your mouth, and last long into the finish, with a nice smooth mouth feel.

Pairing: Strong cheeses need a big, full-flavoured wine. Because the wine is so flavourful, it doesn’t get overpowered by the pungent cheeses, and vice versa – they balance each other. Also, because the cheeses are so pungent, they need either sweet or ripe fruit flavours to mellow out the pungency, and the fruity Shiraz does just that.

Wine Suggestion: Try an Australian Shiraz from Coonawarra or Barossa Valley
