TUSCAN BEANS

Ingredients:

  • 1 pound 5 ounces (600 g) dried cannellini beans
  • ¼ cup (60 mL) olive oil
  • 2 cloves garlic, crushed
  • 4 plum tomatoes, diced
  • 2 tablespoons (30 mL) chopped fresh parsley
  • Salt and pepper

Method:

Soak beans in water in a covered container for 6-10 hours.

Remove from water, and place in a large pot with fresh water.

Boil beans until soft, about 1-2 hours, drain and reserve.

In a separate pan, heat oil over medium-high heat.

Add garlic and cook until lightly coloured, about 1 minute.

Add tomatoes and parsley and cook until heated through, about 1-2 minutes.

Add cooked cannellini beans, and toss together until warmed through and flavours are combined.

Season with salt and pepper and serve immediately.
