Rainbow Zucchini Noodles

Yield:  4 servings.

 

Ingredients:

2 large green zucchini

2 large yellow zucchini

2 cloves garlic, thinly sliced

1 teaspoon (5ml) dried chili flakes

2 tablespoons (30ml) butter

Salt and pepper, to taste

 

Method:

Heat butter in frying pan over medium-high heat.

Using a vegetable peeler, peel long strips of zucchini skin and flesh.

These should look like green and yellow paperdelle (or tagliatelle) noodles.

Add zucchini strips to hot butter and cook for 2-3 minutes, tossing often.

Add chili flakes, salt and pepper and cook for 1 minute.

Remove from heat and serve immediately.
