Part 1 of Green Papaya Salad with Crispy Pork
Ingredients
- 1 cup palm sugar
 - 1/2 cup sweet soy, kecap manis
 - 3 tablespoons oyster sauce
 - [AMOUNT?] Star anise
 - 200 g pork shoulder cut in 1 inch length, 3 mm thick
 
Directions
- Make a syrup by simmering the palm sugar, soy sauce, oyster sauce, salt and star anise until reduced cool.
 - Slice pork, 5 cm by 2 cm pieces and marinade overnight in the syrup.
 - Drain on rack until most marinade is off to avoid burning.
