  1. Place the butter in a heavy saucepan with a light-coloured bottom so you can monitor the browning.
  2. Over moderate heat, melt the butter and cook, stirring frequently, un til the butter solids collecting on the saucepan’s bottom turn and deep golden brown with a nutty scent.
  3. Remove from heave; skim off and discard foam. Serve warm.
