Stacked Watermelon Salad

A stacked watermelon salad with tart and fresh flavours is sure to be a winner!

Dressing:

In a small saucepan, whisk together the balsamic vinegar and sugar. Cook over medium-high heat until reduced by half and syrupy. Set aside.

 

Stacked Salad:

Slice ¾ inch (1.8 cm) thick discs of watermelon and remove the rind. Cut the disk into 6 wedges, keeping the circular shape.

Sprinkle the arugula, feta, red onion, and cherry tomatoes evenly over the watermelon.

Drizzle the dressing over top and finish with flaky salt. Serve immediately.
