Directions

  1. Place quinoa in medium sauce pan.
  2. Pour in stock and salt, bring to a boil over high heat.
  3. Once boiling, cover with lid and turn heat to low.
  4. Allow to simmer for 10-12 minutes.
  5. Remove lid and fluff with fork.
  6. Add all chopped vegetables to a large bowl.
  7. Add quinoa, juice of 1-2 lemons, salt, and pepper to taste.
  8. Serve.
