Chef Siobhan Detkavich is cooking for… Taurus! So… what does an Earth Sign with a ruling planet of Venus eat? Let’s face it, if a Taurus is going to have a salad, it’s gotta be a hefty one. This salad fits that bill with its buttery Bibb lettuce, crispy bacon, juicy tomatoes and rich, tangy ranch dressing!
Ingredients:
Ranch Dressing:
- 2 cloves garlic, minced on a rasp
- 2 tablespoons (30 ml) chopped chives
- 1 cup (240 ml) mayonnaise
- ½ cup (120 ml) buttermilk
- ½ teaspoon (2.5 ml) onion powder
- 2 tablespoons (30 ml) fresh dill, chopped
- 1 teaspoon (5 ml) Worcestershire sauce
- Salt and pepper
To Assemble:
- 1 large head Bibb lettuce, sliced into 4 wedges
- Ranch Dressing
- 4 thick slices bacon, cooked almost crisp and cut into ½ inch (1.25 cm) pieces
- 1 pint (570 ml) grape tomatoes, halved
- 4 eggs, hard cooked, peeled, and halved
- 1 red onion, diced
- ½ cucumber, cut into 1-inch (2.5 cm) slices, then quartered
- 2 avocados, peeled, pitted and diced
- 1 cup (240 ml) sharp cheddar, grated
- Chopped chives, to garnish
Method:
For the Ranch Dressing:
In a large bowl, whisk together the garlic, chives, mayonnaise, buttermilk, onion powder, dill and Worcestershire sauce. Season with salt and pepper.
Transfer the dressing to the refrigerator until needed.
To Assemble:
Place the Bibb lettuces wedges on serving plates.
Top with crumbled bacon. Sprinkle halved cherry tomatoes around the wedge.
Garnish attractively with halved eggs, diced onion, cucumber quarters, and avocado cubes.
Sprinkle grated cheddar over the salad.
Drizzle with ranch dressing.
Garnish with chopped chives. Serve immediately.
