Ingredients
- 1 boneless, skinless chicken breast
- Kosher slat
- 4 tablespoon olive oil
- ½ large yellow onion, thinly sliced
- 2 shiitake, oyster or maitake mushrooms, thinly sliced
- 1 garlic clove grated
- ½ teaspoon grated fresh ginger
- 1 large or 3 small zucchinis, spiralized
- 1 teaspoon toasted sesame oil
- 2 tablespoons coconut aminos
- Kosher salt
Method
- Cut the chicken into ½ inch thick slices, then cut the slices into 2-inch pieces. Season generously with salt
- In a large non-stick pan or wok, heat 2 tablespoons of olive oil over medium high heat. Add the onion and cook, stirring for 2 minutes or until beginning to brown. Add the mushroom and cook, stirring often for 1 minute.
- Push the onion and mushrooms to the side of the pan and add the remaining 2 tablespoons of olive oil and the chicken to the empty side. Cook until the chicken starts to brown on the first side, then flip over and cook for another minute or two until almost cooked through.
- Stir in the mushroom-onion mixture, then add the garlic and ginger and sauté for 30 second, adding a little water if the pan looks dry.
- Add the zucchini noodles, sesame oil and coconut aminos and season everything with a big pinch of salt. Toss to combine, taste and adjust the seasoning, and serve.
