Ingredients
- 5 or 6 slices thick-cut applewood-smoked bacon
- ¼ cup packed brown sugar
- 2 cups heavy whipping cream

- 2 lbs pound cake, cut into 2-inch cubes
- 1 cup The Opposite of Man: Blackberry Mint Jam, recipe follows
- Strawberries, quartered
- Blueberries
The Opposite of Man: Blackberry Mint Jam
- 5 cups blackberries
- 3 tbsp dried mint
- Zest and juice of 1 lemon
- 2 ½ cups sugar
- 2 tbsp bourbon (optional)
Lemon Curd
- 2/3 cup sugar
- 4 egg yolks
- Zest and juice of 2 or 3 small lemons
- 6 tbsp (3/4 stick) butter
Method
- Preheat the oven to 350F. Line a baking sheet with parchment paper and place a baker’s rack on top.
- Place the bacon horizontally across the baker’s rack and coat with the brown sugar, being sure to cover thoroughly. Bake until the bacon is crispy and the sugar has candied, about 20 minutes. Remove from the oven and set aside.
- In a large bowl, using a hand mixer on medium-high speed, whip the cream until stiff peaks form, about 5 minutes.
- Using a rubber spatula, gently fold the lemon curd into the whipped cream.
- Begin to layer a trifle dish with a layer of pound cake, dollops of jam, and berries, then top with the whipped cream and lemon curd. Repeat until the final layer is whipped cream and lemon curd.
- Cut the candied bacon into bite-size pieces and place on top of the trifle.
The Opposite of Man: Blackberry Mint Jam
- Combine all the ingredients in a large pot. Turn the heat to medium-low and allow ingredients to thicken, stirring occasionally, 20 to 30 minutes.
- Once thick, pour the jam into sterilized canning jars, leaving about ½ inch of headspace. Allow to cool to room temperature, then cover and store in the refrigerator for up to 1 week.
Lemon Curd
- In a small bowl, whisk together the sugar and the yolks until mixture becomes a pale yellow, about 2 minutes. Add the lemon zest and juice, and stir until well incorporated, about 1 minute.
- Heat a medium saucepan on low heat, and transfer the egg mixture into the pan. Stirring vigorously, begin to add pads of butter until the mixture thickens and forms a curd, 6 to 7 minutes. Once thickened, remove from the heat, allow to cool, and store in refrigerator for up to 1 week.
