This warm potato salad is lighter and more flavorful than the typical mayonnaise-dressed variety. Bacon adds meaty crunch, blue cheese brings the funk, and red onion, basil, and watercress keep the salad fresh and bright. This is a BBQ side you’re sure to return to for every summer occasion!
POTATO SALAD WITH BASIL, BLUE CHEESE, AND BACON
Ingredients:
- 1 ½ lbs. red skinned potatoes, boiled 10 minutes and drained but not cooled (.68 kg)
- ¼ lb of bacon, cooked and drained (113g)
- ½ cup red onion, thinly sliced (125ml)
- 4 oz. good blue cheese (112g)
- 2 tbsp fresh basil leaves, roughly chopped (30ml)
- 1 small bunch watercress, trimmed
- Salt and pepper to taste
Dressing:
- 1/2 tablespoon cider vinegar (7ml)
- 1/2 teaspoon Dijon mustard (3ml)
- 1/2 tablespoon fresh lemon juice (7ml)
- 1 teaspoon garlic, minced (5ml)
- 2 tbsp olive oil (30ml)
- Salt and pepper to taste
Method:
In a small bowl or jar mix all dressing ingredients until well combined.
Cut warm potatoes in half. Place potatoes in a large bowl and pour over dressing.
Add the remaining ingredients and toss gently to combine.
