Peaches with Ricotta and Honey

Ingredients:
- 4 ripe peaches, cut in half and pits removed (use nectarines or apricots if peaches are not available)
- 1 cup (252 g) Ricotta cheese
- 2 tbsp honey, plus more for serving
- 1/4 cup (42 ml) fresh mint, thinly sliced
- Pinch of salt
Method:
Slice each peach half into 4 wedges and arrange on a serving platter. Place dollops of Ricotta over the peaches. Drizzle all over with honey and garnish with mint. Season lightly with a pinch of salt and serve with additional honey for drizzling.
