Fried Halloumi with Spicy Tomato Jam

Ingredients:
For the Fried Halloumi:
- 200 g (7 oz) halloumi, cut into sticks
- 1 cup all-purpose flour
- 4 eggs
- 1 cup panko breadcrumbs
- 1 tbsp kosher salt
- Canola oil for frying
For the Spicy Tomato Jam:
- 1/2 lb Roma tomatoes, diced
- 1/2 sugar
- 2 tbsp lemon juice
- 1/2 tsp cumin
- 1/2 tsp dried oregano
- 1/4 tsp smoked paprika
- 1 habanero pepper
- 1 tbsp kosher salt
Method:
Make the Fried Halloumi:
Heat enough oil for deep frying in a heavy bottomed pot or Dutch oven to 375 F (190 C).
Set up a three step breading station with shallow trays of flour, beaten eggs, and panko. Bread halloumi with flour, then eggs, then panko.
Fry halloumi in oil until gooey in the center. Season with salt and serve with Spicy Tomato Jam.
Make the Spicy Tomato Jam:
Place everything in a saucepot on medium heat. Cook until jam consistency and serve with the fried halloumi.
