Ingredients:
Mojo Sauce:
	2 limes
	1/4 cup orange juice
	1/4 cup olive oil
	4 garlic cloves, minced
	1/2 teaspoon ground cumin
	1/4 teaspoon salt
	1/4 teaspoon dried oregano
	1/8 teaspoon pepper
	Honey 
Yucas:
	1-1/2 pounds yuca or cassava root, peeled, cored and cut into 3-inch pieces
	1 teaspoon salt
	Oil for frying
Method
1.	In a small pot, heat oil, with garlic and spices, to start cooking.
2.	When garlic starts to brown, add orange and lime juice and keep cooking for a few minutes. Taste and add honey depending on the acidity of the sauce.
3.	Set aside
4.	In a large pot of salted boiling water, cook yuca until fork-tender, 8-10 minutes.
5.	Drain and pat yuca pieces dry.
6.	In a deep skillet, heat 1 inch of oil to 375°.
7.	Fry yuca, a few pieces at a time, until golden brown, 8-10 minutes.
8.	Drain on paper towels.
9.	Serve immediately with dipping sauce or toss to coat in sauce if desired.
