- 1 cup canola oil
- 2 tablespoons packed light brown sugar
- 1 tablespoon cayenne pepper (use more if you like more heat)
- 1 tablespoon smoked paprika
- 2 tablespoons sweet paprika
- 2 teaspoons kosher salt
- 1 teaspoon chilli powder
- 1 teaspoon ground chipotle
- 1 teaspoon garlic powder
- ½ teaspoon freshly ground black pepper
For the Spicy Chicken
- ¾ cup buttermilk
- 1 ½ tablespoons seasoning salt
- 6 boneless, skinless chicken thighs
- 1 ½ all purpose flour
- 24 saltine crackers, finely ground
- 1 ½ tablespoons Cajun Spice
- 1 ½ tablespoons freshly ground black pepper
- 1 ½ teaspoons baking powder
- Canola oil for frying
- 6 potato buns, split and toasted
- ¾ cup mayonnaise
- 3 cups shredded iceberg lettuce
For the Cajun Spice
- ¼ cup kosher salt
- ¼ cup smoked paprika
- 2 tablespoons cayenne pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon ground white pepper
- 1 tablespoon freshly ground black pepper
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
Method
Make the Cajun Spice
- In a medium bowl, stir together the salt, smoked paprika, cayenne, garlic powder, onion powder, white pepper, black pepper, thyme, and oregano. Store in an airtight container or jar at room temperature for up to 1 month.
Make the Hot Oil
- In a medium bowl, whisk together the canola oil, brown sugar, cayenne, smoked paprika, sweet paprika, kosher salt, chili powder, ground chipotle, garlic powder, and black pepper.
- Cover and set asides at room temperature.
- To bring out all the flavors of the spicy oil, warm it in a saucepan over super-low heat, to about 115F, before coating the chicken.
Make the Chicken
- In a small bowl, whisk together the buttermilk and seasoning salt. Place the chicken in a large resealable plastic bag and pour in the seasoned buttermilk. Seal the bag and make sure the kitchen is evenly coated. Refrigerate for at least 4 hours, ideally overnight.
- Set the wire rack on a baking sheet.

- Pour about 4 inches of canola oil into a Dutch oven or large pot over medium-high heat, or a deep fryer, and bring 325F. Working in batches of two or three chicken thighs, fry the chicken for 5 minutes, until golden brown and the interior temperature registers 165F on an instant-read thermometer. If you are not using a deep fryer, you may want to flip the chicken halfway through cooking.
- Transfer the fried chicken to a large mixing bowl, being careful not to disturb the crispy bedding. Pour the Nashville hot oil over the chicken and toss gently to coat well.
- Spread both cut sides of the buns with mayo and place the dressed crispy chicken on each bottom bun, followed by a layer of lettuce, and then the top bun.
