Starlit Stuffed Chicken with Berry Reduction Recipe
This Starlit Stuffed Chicken with Berry Reduction recipe combines tender chicken breasts with a creamy ricotta, spinach, lemon, and parsley filling, then finishes each serving with a vibrant blueberry-blackberry reduction and golden puff pastry stars. Featured on Cook the Books: Celebrity Edition with host Shahir Massoud, this recipe from A Feast of Thorns and Roses by Chelsea Cole transforms stuffed chicken into an elegant, whimsical main course.
The Inspiration
Taken from Chelsea Cole’s A Feast of Thorns and Roses, this recipe blends fantasy-inspired presentation with familiar, comforting flavours. The combination of creamy stuffed chicken, jewel-toned berries, and delicate pastry stars gives the dish a dramatic appearance while keeping the cooking techniques approachable.
The berry reduction gives the dish its most distinctive contrast. Blueberries and blackberries are cooked with sugar and lemon juice until the fruit breaks down into a rich sauce. Straining the mixture removes the seeds and produces a smoother reduction that can be drizzled elegantly across the chicken.’
For Cook the Books: Celebrity Edition, the recipe fits perfectly with Shahir Massoud’s exploration of dishes that bring cookbook worlds to life through food.
Ingredients
- 1 sheet puff pastry at room temperature
- 1 egg
- Kosher sat
- 4 ounces ricotta cheese
- Finely grated zest of 1 lemon
- 2 tablespoons chopped fresh flat leaf parsley
- ½ cup finely chopped fresh or frozen and thawed spinach
- 4 boneless, skinless chicken breasts
- Freshly cracked black pepper
- Olive oil
- ½ cup fresh or frozen blueberries
- ½ cup fresh or frozen blackberries
- ¼ cup sugar
- 1 tablespoon fresh lemon juice (from about 1/2 lemon)
Method
- Preheat the oven to 425F and line a baking sheet with parchment paper.
- Unfold the puff pastry, if necessary, and place it flat on a work surface. Using a small, star-shaped cookie cutter, cut out 20 or 24 stars from the puff pastry sheet and place them on the prepared baking sheet. Whisk the egg in a small bowl. Brush the puff pastry stars with the egg wash and lightly sprinkle with salt. Bake the stars until golden brown, 5 to 8 minutes, then set aside to cool.
- Reduce the oven temperature to 375F and line another baking sheet with aluminum foil.
- In a bowl, combine the ricotta, lemon zest, parsley, and spinach. Mix well and set aside.
- Place the chicken breasts on a cutting board between 2 layers of plastic wrap. Pound them to an even thickness of about ½ inch. Season both sides with salt and pepper.
- Dollop ¼ of the ricotta mixture onto each chicken breast and spread evenly to coat the top of the chicken breasts and secure with toothpicks if necessary. Brush the outside of each roll with olive oil.
- Place the chicken rolls on the prepares baking sheet. Bake until the chicken is cooked through, and the filling is bubbly, 20 to 25 minutes.
- While the chicken bakes, make the berry reduction: In a saucepan combine the blueberries, blackberries, sugar, and lemon juice and place over medium heat. Cook until the berries break down and the sauce thickens, 10 to 12 minutes. Strain the berry reduction into a bowl using a mesh strainer to remove the seeds. Set aside to cool.
- To serve, divide the chicken rolls and drizzle each with the berry reduction. Garnish with 4 or 5 puff pastry stars on each breast. Serve right away.
Serving Suggestions
Starlit Stuffed Chicken with Berry Reduction makes an elegant centerpiece for a dinner party, date-night meal, or special themed gathering. Serve it with roasted baby potatoes, buttery mashed potatoes, or a simple wild rice pilaf to complement the creamy ricotta filling. Roasted asparagus, green beans, or a lightly dressed salad can add freshness and keep the plate balanced.
The sweet-tart berry reduction is already a strong flavour element, so simple side dishes work especially well. For an impressive presentation, arrange the sliced or whole chicken roll over a small bed of greens, drizzle the sauce around the plate, and place the puff pastry stars just before serving so they stay crisp.
Final Thoughts
This Starlit Stuffed Chicken with Berry Reduction recipe combines comforting ingredients with a striking fantasy-inspired presentation. The ricotta, spinach, parsley, and lemon filling keeps the chicken creamy and savoury, while the blueberry-blackberry reduction adds sweetness, acidity, and dramatic colour.
