Old Bay Crab Baguette Sandwich

Ingredients:
- 8 oz premium crab meat
- ½ cup unsalted butter at room temperature
- 1 long baguette
- ½ cup mayonnaise
- 1 tsp smoked paprika
- 1 tsp ground celebrity seed
- 1 tsp ground ginger
- 3 ground bay leaves plus 1 whole bay leaf
- ½ tsp white pepper
- 1 tsp cracked black pepper
- 1 tsp cayenne pepper
- 1/8 tsp ground nutmeg
- 1/8 tsp ground cardamom
- 1/8 tsp ground allspice
- 1/8 tsp ground cinnamon
- ¼ tsp mustard powder
- Juice and zest from 1 lemon
- 1 bunch scallions
- 1 head iceberg lettuce, shredded
- 1 tbsp tabasco sauce
- 1 red onion
- ½ cup white vinegar
- ½ cup water
- 1 tbsp sugar
- 1 tbsp salt
- 2 sprigs dill
Method:
Add vinegar, water, sugar, salt, bay, and dill to a pot and bring to a boil.
Slice the red onion, place it in a bowl, and pour over the boiling vinegar mixture. Cover and let sit to quick pickle the onion.
In a bowl, mix crab with mayonnaise, spices, lemon, scallion, and hot sauce.
Cut baguette in half lengthwise and rip out bread from the center to make a boat for the sandwich fillings. Spread butter on the bread and grill cut side down until charred.
Fill one baguette half with lettuce, top with crab mix, pickled onions, and remaining baguette half and serve.
