Lumache Pasta in Vodka Sauce

Ingredients:
- 1 box Lumache or Lumachine pasta
- 1 cup (237 ml) 35% heavy cream
- 1/2 cup (118 ml) cubed pancetta
- 1 tsp (2.5 ml) red pepper flakes
- Olive oil
- 1 clove garlic
- 2 tbsp (29 ml) unsalted butter
- 1/4 cup (59 ml) vodka
- Basil leaves for garnish
Method:
Cook pasta until it is al dente.
While pasta is cooking, make the sauce. Heat olive oil in a saucepan and add diced pancetta. Once almost crispy, add grated garlic, chilli flakes, and deglaze with vodka. Cook off the alcohol, then add tomato paste and cream. Stir and cook until thickened.
Add pasta and toss to coat with the sauce. Garnish with fresh basil leaves.
