The Inspiration
Greek cuisine is celebrated around the world for its fresh herbs, vibrant citrus flavors, quality olive oil, and simple grilling techniques. Lamb souvlaki is one of Greece’s most iconic street foods, traditionally made by marinating tender pieces of lamb before grilling them over an open flame until perfectly charred on the outside while remaining juicy inside.
On Maddie and Kiki’s BBQ Barn Season 2, Maddie and Kiki Longo embrace these timeless Mediterranean flavors while creating an approachable barbecue recipe that anyone can recreate at home. The lamb is infused with lemon, oregano, garlic, and onion before being grilled over high heat, while a homemade tzatziki made with creamy Greek yogurt, cucumber, dill, and mint provides the perfect cooling contrast.
Whether served at a backyard barbecue, weekend dinner, or summer celebration, this lamb souvlaki recipe captures the spirit of outdoor cooking while bringing authentic Greek flavors straight to your table.
Ingredients
- 2 lbs of lamb loin (trimmed of fat), cut into 1 inch squares
- 2 lemons
- 3 tbsp olive oil plus 2 tbsp olive oil, divided
- 2 tbsp fresh oregano, finely chopped
- 6 garlic cloves, grated on a rasp
- ½ medium yellow onions, grated on a cheese grater
- Salt and pepper
- 1 cup full-fat Greek yogurt
- ½ cup cucumber, grated on the fine side of a cheese grater and squeezed from excess water
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh mint, chopped
- 1 cup store bought or homemade Tzatziki sauce (250ml)
- Olive oil for brushing
- Tin foil
- 8 bamboo skewers that have soaked in cool water for 30 minutes.
Method
- In a medium bowl, combine the zest and juice from 1 lemon, 3 tbsp olive oil, oregano, yellow onion and ¾ of the grated garlic.
- Whisk everything together.
- Add the lamb pieces and mix.
- Season with salt and pepper and mix.
- Marinade for 2 hours or up to overnight.
- Meanwhile, make the tzatziki sauce.
- In a mixing bowl, whisk together the Greek yogurt, remaining olive oil, juice from ½ lemon, remaining grated garlic, cucumber, dill and mint.
- Adjust seasoning with salt and pepper.
- Once ready to grill, preheat barbeque for direct grilling at high heat (around 450F).
- Oil the grill to prevent sticking. Remove lamb from the marinade and thread the cubes onto the bamboo skewers (6 cubes per skewer).
- Place lamb skewers on the grill and slide foil underneath the bamboo skewers to prevent the sticks from charring.
- Cook lamb for 2 minutes per side or until nice char marks are achieved and the meat is medium on the inside.
- Remove lamb from grill, allow to cool slightly and squeeze the juice of the last half lemon over the meat.
- Serve tzatziki sauce on the side.
