The Inspiration
Griddle Nation takes inspiration from viral food recipes and internet cooking trends, bringing those ideas to the flat-top griddle. Nate’s Brisket Taquitos transform familiar taco and barbecue flavours into a crispy, handheld dish that showcases the versatility of griddle cooking.
The recipe brings together two distinct culinary influences. Smoked brisket provides a rich barbecue-inspired foundation, while tomatillos, jalapeño, poblano, Scotch bonnet, cilantro, corn, and Mexican-style cheese introduce bright and spicy flavours.

- 1 Pound Brisket, Smoked and Cut into Small Dices
- Blackstone Street Taco Seasoning

Methods

- To the onions, add the corn and bell peppers. Season and toss to combine.
- In the food processor, add cilantro leaves and blend into salsa. Set aside
- To build the taquitos, add some shredded cheese to the tortilla, then brisket, and some salsa. Roll up and place on griddle.
- Allow taquitos to cook 3-4 minutes or until golden brown on all sides.
- To plate, lay down a bed of the corn mixture, place taquitos on top, garnish with a drizzle of hot sauce and BBQ sauce, and chopped cilantro.
- Serve with a side of the tomatillo salsa for dipping.
Serving Suggestions
Serve the taquitos with the corn and pepper mixture underneath for a colourful and substantial plate. A crisp green salad can provide a fresh contrast to the rich brisket and melted cheese, while additional vegetables can round out the meal.
For a larger gathering, arrange the taquitos on a large platter with bowls of tomatillo salsa, hot sauce, and BBQ sauce alongside them. This makes it easy for guests to choose their preferred level of heat and flavour.
The taquitos also pair well with other casual Mexican-inspired sides, including fresh vegetables or simple salads. Their combination of smoky, spicy, cheesy, and crispy flavours makes them substantial enough to serve as the main attraction while still working beautifully as part of a larger spread.
Final Thoughts
These Brisket Taquitos are a bold and delicious celebration of griddle cooking, combining smoky brisket, melted Mexican cheese, charred tomatillo salsa, sweet corn, peppers, caramelized onions, and golden crispy tortillas.
The combination of textures is what makes these taquitos especially memorable. The tortillas become golden and crisp, the brisket remains hearty and smoky, the cheese melts into the filling, and the salsa adds brightness and heat.
Whether you’re looking for a creative brisket recipe, an easy griddle meal, or a fun dish for casual entertaining, these taquitos deliver big flavour without an overly complicated cooking process.
