Ingredients
- Butter or pan spray, for greasing
- 1 pound (454g) bacon, sliced into ½- inch (1cm) strips
- One 32-ounce (907g) bag frozen Tater tots
- 8 ounces (227g) Colby-Jack or cheddar, shredded, divided.
- 1 dozen eggs
- 1 cup (240ml) whole milk
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 12 to 16 flour tortillas

For the Delicious Beans
- 1 to 2 tbsp unsalted butter
- 2 strips bacon, thinly sliced (optional)
- ½ yellow onion, roughly chopped
- 1 serrano pepper, roughly chopped
- Kosher salt
- ½ pound (227 g) dried red, black, or pinto beans (about 1 cup), soaked in water overnight and drained
- 1 bay leaf
For the Pico de Gallo
- 3 Roma or Campari tomatoes, seeded and finely diced (about 1 cup/180 g)
- ½ yellow onion, finely diced (about ¾ cup/100 g)
- 1 large jalapeño, seeded and finely diced (about ¼ cup/40 g)
- 3 tbsp roughly chopped fresh cilantro
- 3 tbsp fresh lime juice
- Kosher salt
Method
Make the Delicious Beans
- Add 1 tbsp butter and the bacon (if using) to a large pot, and set over medium heat. (If you aren’t using bacon, add 2 tbsp butter to the pot.) When the bacon (or just the butter) starts to sizzle, add the onion and serrano, season with salt, and cook until the onions are translucent, about 5 minutes.
- Add the beans and bay leaf, and cover with water by 1 inch (2.5 cm). Season with more salt, and bring to a boil. Reduce the heat to low, cover, and cook until the beans are very soft, about 90 minutes.
- Remove the bay leaf from the pot, and use a spider or a large, slotted spoon to transfer the beans to a food processor or blender. Add ½ cup (120 ml) of the cooking liquid, and pulse a few times to your desired consistency. (We like ours a little chunky.) Add more cooking liquid to thin the beans if you like. They’ll thicken quite a bit as they cool.
- Season with more salt.
Make the Pico de Gallo
- Combine the tomatoes, onion, jalapeño, cilantro, and lime juice in a bowl. Season to taste with salt (1/2 to 1 tsp).
- Cover in an airtight container and store in the fridge for at least 1 hour before using. The pico will continue to pickle and release juices as it sits, so if you want a fresher flavor, make it closer to the time you’ll eat.
Make the Breakfast Taco Casserole
- Preheat the oven to 350F (180C). Grease a 9×13 inch (23x33cm) baking dish with butter or pan spray.
- Cook the bacon in a large skillet over medium-low heat until crispy, about 10 to 15 minutes. Transfer the bacon to a paper towel-lined plate to drain. (Don’t forget to save that bacon fat! See page 27)
- Layer the tots evenly along the bottom of the prepared baking dish and then cover them with the bacon and half of the Colby-Jack.
- Whisk together the eggs, milk, salt, and pepper in a large bowl until smooth and then pour it over the tot mixture.
- Top with the remaining Colby-Jack, and bake for about 40 minutes, until it’s puffed up a little and set and the edges are browned.
- While the casserole bakes, heat the tortillas: Wet your fingers and use them to flick a little bit of water on top of each tortilla, stack them on top of each other, and wrap them in foil. Place them in the oven or about 10 minutes.
- Have everyone assemble their own “breakfast taco” by putting a scoop of the casserole in a tortilla and topping it with some avocado, cilantro, beans, and pico (if using).
