  1. In a small casserole (with cover, cast iron better), layer all the ingredients: first a little olive oil, then a layer of tomatoes, then the potatoes, then garlic, peppers, onions, fish and finished with remaining tomatoes. Make sure to season every layer, then pour in the stock.
  2. Cook at low heat to build in flavour. It can be finished in the oven, but the stove top is recommended.
