Guatemalan Corn Drink (Atol de Elote)
Guatemalan Corn Drink (Atol de Elote) is a warm, comforting Guatemalan corn drink made from fresh corn, milk, and lightly sweetened with brown sugar and vanilla. Pureed corn creates a naturally thick, creamy texture, while a hint of cinnamon adds aromatic warmth. Distinctive for its subtly sweet, velvety consistency and fresh corn flavor, this traditional beverage is a beloved treat during holidays and cozy gatherings.
Ingredients:
- 4 corn cobs, shucked
- 1 ½ cups (355 ml) water
- 2 cups (473 ml) whole milk
- 1/2 cup (118 ml) light brown sugar
- ½ tsp (2.5 ml) vanilla paste
- ¼ tsp (2.5 ml) salt
- Ground cinnamon, for garnish
Method:
Slice the kernels off the corn cobs, reserving the juice along with the kernels. Discard the cobs and transfer the juice and kernels to a blender or food processor along with the water. Puree until smooth.
Transfer the pureed corn to a saucepan along with the milk, light brown sugar, vanilla paste, and salt. Slowly bring up to a simmer over medium low heat. Continue to cook, stirring occasionally, until the mixture has thickened, about 15 minutes.
Serve warm in mugs, garnished with a sprinkle of cinnamon.
