Method
- In a wide pan, combine water, bay leaves, cloves and salt.

Cook for 8–10 minutes, depending on thickness. - Cool properly. Remove salmon immediately and transfer to a plate.
- Cool to room temperature (15–20 minutes). Break into large flakes using a fork. Avoid overworking.
- Place fish in a mixing bowl. Add crème fraîche, Greek yogurt, shallot, capers, lemon zest and juice chives and dill.
- Fold gently. Season with salt and white pepper.
