Method
- In a large bowl, soak the littlenecks in cold water salted with 3 tbsp sea salt for at least 30 minutes to remove the sand.
- In a large stockpot over medium heat, cook the onion, leek and celery until they soften and start to turn translucent, about 4 minutes. Add the fennel, garlic, and tomatoes and cook another 2 minutes.
- Add the seafood stock, wine, thyme and rosemary sprigs, saffron, 1 tbsp of salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes. (The stock can be mad a day in advance and kept in the refrigerator.)
- Add the shrimp, whitefish, scallops, and mussels [and littleneck clams] and simmer, covered, for about 10 to 15 minutes, until the shells open.
- Serve the soup in large bowls with crusty bread.
