- 20 fingerling potatoes, parboiled and chilled
- 4 cups of mixed mushrooms, such as button, Cremini, etc.
- Zest of 2 lemons
- ¼ cup garlic, minced
- ¼ cup olive oil
- ¼ cup unsalted butter, melted
- ¼ cup (tightly packed) fresh basil, chopped
- ¼ cup chives, chopped
- Salt and pepper, to taste
- 1 cup of sour cream, for serving
Method
- Clean mushrooms by brushing them lightly or rubbing them with a clean towel.
- Place them in a bowl.
- Gently smash the parboiled potatoes between 2 pieces of parchment paper using the bottom of a small pot.
- Do not smash them too much as we want them to hold together.
- Place the potatoes in a separate bowl from the mushrooms.
- Drizzle the mushrooms with 2 tbsp of oil and season with salt, pepper, zest of 1 lemon and 2 tbsp of the garlic.
- Drizzle the potatoes with the remaining oil and season with zest of 1 lemon, remaining garlic, salt and pepper.
- Preheat the grill to 375F or medium high heat. Oil the grill grate and a grill basket to help avoid sticking.
- Place potatoes directly on the grill and cook turning occasionally for approximately 10-15 minutes until crispy and golden brown.
- Simultaneously, place the mushrooms in the grill basket and cook for 10-15 minutes while turning and flipping until nice golden char marks are achieved.
- Remove the potatoes and mushrooms from the grill and place them together in 1 bowl.
- Pour melted butter over everything and gently toss together.
- Add the basil and chives and fold gently.
- Adjust seasoning with salt.
