Serves: 6-8
Ingredients
- 1 lb. package of dried penne noodles (454g)
- 1 tablespoon sesame oil (15ml)
- 1/3 cup Teriyaki sauce (83ml)
- 2-3 teaspoons Thai sweet chili sauce (10-15ml)
- Juice of 1 lemon
- 1 red bell pepper cored and thinly sliced
- 1 yellow pepper cored and thinly sliced
- ¼ cup fresh chopped cilantro leaves (60ml)
- 4 green onions thinly sliced
- ¼ cup chopped cashews (60ml)
Directions
- Cook pasta in a large pot of boiling salted water for 8-10 minutes or until pasta is el dente (softened with a firm texture).
- Drain pasta and cool.
- In a small bowl whisk together sesame oil, teriyaki sauce, Thai chili sauce and lemon juice. Whisk ingredients until evenly blended.
- Pour the dressing mixture over noodles. Add the fresh peppers, cilantro, green onion and chopped cashews.
- Mix to combine evenly.
- Place pasta salad in the refrigerator for 30 minutes to chill and serve.
