- 2 cups (480 ml) diced king oyster mushrooms
- 2 cups (480 ml) peeled pearl onions
- 2 shallots, minced
- 3 garlic cloves, minced
- 2 Scotch bonnet peppers, seeded and minced
- 1 1/2-inch piece ginger, peeled and grated
- 2 medium carrots, diced
- 1 tablespoon (15 ml) fresh thyme leaves
- ½ tablespoon (7.5 ml) whole cloves
- 2 cinnamon sticks
- 1 ½ (25 ml) tablespoons allspice berries, crushed
- 1 teaspoon (5 ml) freshly grated nutmeg
- 4 ¼ cups (1 L) red wine
- 2 cups (480 ml) beef stock
- Salt and pepper
- Fresh chives, chopped
