The Inspiration
This dish is inspired by traditional Spanish paella, a celebrated rice dish known for its saffron aroma, layered seafood flavours, and communal style of eating. In this modern interpretation, smoky chorizo adds depth and spice while halibut brings a clean, delicate seafood contrast that balances the richness of the dish.
On Fish the Dish, Spencer Watts often reimagines classic global recipes by enhancing them with bold flavours and accessible cooking techniques. This version of paella reflects that approach by combining pantry-friendly ingredients like Arborio rice and chipotle paste with premium seafood and aromatic saffron.
The result is a vibrant, deeply flavoured rice dish that is both rustic and refined, perfect for sharing and celebrating good food.
