Lemon Grass Butter for Clams

Directions

  1. Put all of the Lemon Grass Butter ingredients into a pot and let simmer over medium high heat until flavours are infused.
  2. Preheat grill to 375°F/ 190°C or medium high heat.
  3. Scrub and rinse clams well.
  4. Place clams on grill, cook for 4 minutes or until all clams have opened.   (Discard any that do not open)
  5. Remove clams from grill, place in large bowl or bucket.  Pour lemon grass butter mixture over top of clams.
  6. Combine well.
  7. Serve immediately.
