Banana Fritters

  1. Preheat the oil to 375 degrees Fahrenheit
  2. In a large bowl, mash the bananas.
  3. Mix in the milk, eggs and butter until smooth.
  4. In a separate bowl, combine the flour, sugar, baking powder, salt, cinnamon and nutmeg.
  5. Stir the dry ingredients into the banana mixture.
  6. Heat the oil in a deep fryer or heavy bottomed pan.
  7. Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes.
  8. Drain on paper towels and dust with confectioners’ sugar.
